Easy Toasted Ravioli

This is a super easy go-to meal that is delicious! Just pre-heat oven to 400. Mix about a cup of breadcrumbs, 1/2 c. finely shredded parmesan, 1 tbsp dried oregano and several good shakes of garlic salt. Cook fresh ravioli (I like the wild mushroom at New Seasons) in boiling water for 4-8 mins. depending on the brand. Drizzle olive oil on a baking sheet and set aside. Drain and run cool water over the raviolis. Then dip one at a time in 1 beaten egg coating both sides. Repeat with the breadcrumb mixture and set onto the baking sheet. When all of the raviolis are coated, drizzle the top with olive oil and put in the oven for 20ish minutes - flipping over halfway through. Serve with tomato sauce. done!

Yummy Summer Vegetable Sandwich



I usually make this one on the grill, but since it's a bit wet out, I'm broiling in the oven instead.  It's simple, healthy and delish! Just slice vegetables of your choice (I used eggplant, zucchini, yellow squash and red peppers) thinly in a single layer on a baking sheet.  Drizzle with olive oil, salt, and pepper.  Then pop in the oven for 10 mins on 500ish degrees. 
Then layer bread (I used large sourdough english muffins) with pesto and mozzarella.
Finally, layer with the roasted vegetables.
...and voila! Simple and yummy lunch or dinner!
